  • 4 cups water
  • 2 cups brown rice
  • 1 pound ground beef
  • 1 onion, diced
  • ¼ cup chopped mushrooms, or to taste
  • 3 cloves garlic, chopped
  • 1 (26 ounce) jar tomato sauce
  • 1 (16 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon Italian seasoning

  • 6 red bell peppers, tops and seeds removed
  • ¼ cup grated Parmesan cheese, or to taste


  1. Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, about 40 minutes; transfer cooked rice into a large mixing bowl.
