As the days are getting colder, here is another classic which will keep you warm. I find that mixing the spices with the mince and using a mild dried ancho chilli give lovely flavours.
Ingredients
- 500g lean mince beef
- 1 medium dried ancho chilli
- 1 tbsp paprika
- 1 tbsp black pepper
- 1/2 tbsp brown sugar
- 2 tsp cumin
- 1/2 tsp cayenne pepper
- 2 tablespoons olive oil
- 1 green chilli, finely chopped (2 if you want it more spicy)
- 1 onion chopped
- 3 cloves garlic chopped
- 200 ml beef stock
- 1-2 tins of chopped tomatoes
- 1 tin of red kidney beans
- Salt
Instructions
Sauté the whole anchello chilli for 3 mins and remove from the heat. Soak it in hot water for 20 mins and remove the seeds and chop finely.
In a meantime in a bowl add the beef and toss with paprika, 1 tsp of cumin, black pepper and brown sugar.
Brown the beef with garlic and onion, add the tinned tomatoes, the kidney beans, 1tsp of cumin, the stock and the anchello chilli, green chili and season well.
Bring to boil then simmer for 40-60 mins. I served mine rice with homemade pitta bread.
