Spicy Noodles with Homemade Chili Paste

There are so many ways – big and small alike – how you can help our planet on a daily basis….but (naturally) I will focus on little changes when it comes to your food choices. You don’t have to be vegan, and you definitely don’t have to be perfect, but every little bit counts.

From choosing a plant-based meal or product, to bringing your own bags to the store, choosing the organic over the conventional product, avoiding items unnecessarily wrapped in plastic, saying no to single use plastic, and an overall more mindful approach to shopping to avoid (food) waste.

A big part of why I am sharing all these recipes here, is to give you new ideas and alternatives to make the most delicious vegan food!

One of my most popular recipes I ever shared are these Spicy Udon Noodles with Homemade Chili Paste!

Ingredients:

Chili Paste

  • 1/2 cup avocado oil
  • 1/2 small carrot, chopped
  • 1/2 small onion, chopped
  • 5 garlic cloves
  • 1 fresh chili, chopped
  • 2 tbsp chili flakes
  • 3 tbsp dark soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar

*scale back on the chili for a less spicy sauce

Plus:

  • Udon noodles
  • Vegetables of choice

Method:

1- Heat up the oil in a small saucepan, and fry chopped carrot, onion and garlic cloves until fragrant and lightly browned.

2- Add chilis, and stir for 30 seconds.

3- Add soy sauce, vinegar and sugar.

4- Let mixture cool down slightly, then add everything to a blender and blend for 60 seconds or until smooth.

5- Refrigerate in a clean glass jar.

6- The chili paste will hold in the fridge for several weeks.

7- For the stir-fry, cook noodles according to package directions, rinse and set aside.

8- Sauté vegetable of choice (I used carrot, zucchini, mushroom, shelled edamame and scallions), add noodles, and a couple tablespoons (to preference) of the chili paste. If needed add a splash of water to thin out the paste/sauce.
