In the mood for something sweet? Picture a nutty, crumbly shortbread-like crust, a rich and tangy plain cheesecake layer topped with a creamy, fruity blueberry cheesecake layer and finished off with a zesty, jammy blueberry and you get this dreamy, irresistible treat. Happy Tuesday!

Ingredients:

INGREDIENTS FOR THE CRUST

  • ¾ cup pecans
  • ¾ cup old fashioned oats (or gf oats)
  • ⅓ cup almond flour
  • 3 medjool dates
  • 2 tbsp coconut oil (use refined if, like my husband, you can’t stand coconut oil flavor)
  • 1 tsp cinnamon
  • ¼ tsp sea salt

INGREDIENTS FOR THE PLAIN CHEESECAKE LAYER AND BLUEBERRY CHEESECAKE LAYER

  • 2 cups raw cashews, soaked overnight
  • ⅔ cup coconut cream
  • ½ cup maple syrup
  • ¼ cup coconut oil, softened
  • 2 tbsp lemon juice
  • ¼ tsp sea salt
  • 1 cup blueberries, fresh or frozen

INGREDIENTS FOR THE TOPPING

1½ cups blueberries, fresh or frozen
2 tbsp chia seeds
2 tbsp maple syrup
1½ tbsp lemon juice

Method:

METHOD OF THE CRUST

1- Line a springform pan with parchment paper. Combine all ingredients together in a food processor and pulse till well incorporated and doughy. Press evenly into the bottom of the pan

METHOD FOR THE PLAIN CHEESECAKE LAYER AND BLUEBERRY CHEESECAKE LAYER

1- In a high speed blender combine all ingredients together except for the blueberries. Pulse till completely pulverized, smooth and creamy.

2- Pour ⅔ of the mix on top of the crust. Transfer to freezer and let set 1 hour.

3- Meanwhile combine the leftover ⅓ of the mix with the blueberries and pulse till completely smooth.

4- Spread the blueberry cheesecake layer over the plain one (once it has set) and return to freezer for 1 hour.

METHOD FOR THE TOPPING

1- Combine all ingredients in a high speed blender and pulse till consistency is jam/jelly like. Spread on top of the cheesecake and freeze at least 4 hours. Once set remove from freezer and store in fridge or enjoy immediately topped with fresh blueberries.
