Here is one of my favourite recipe to make on a cold and windy day! It is warming and delicious, the great thing about it is that you can use any veggies, meat leftovers or seafood. I used soy sauce and vegetable stock to make the broth.
- Soba Noodles 160g
- 160g raw king prawns
- 600ml vegetable stock
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1-2 tsp soy sauce
- 1 tsp sesame oil
- 1 red chilli, sliced
- 4 spring onion, finely sliced
- 2 small pack choi, leaves separated
- 1/2 carrot, ribboned
Mix the garlic, ginger, soy sauce, sesame oil and 600ml vegetable stock and to a simmer. Add the prawns and pack choi, and simmer for 5 minutes until softened. Add the noodles and sprinkle the chilli, spring onion and sesame seeds to serve.
