Ingrédients
  

Peach Filling:

  • ½ cup white sugar
  • 1 tablespoon cornstarch
  • ¼ teaspoon ground cinnamon
  • 4 cups sliced fresh peaches
  • 1 teaspoon lemon juice

Cobbler Topping:

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 3 tablespoons shortening
  • ½ cup milk

Instructions
 

  • Set your oven temperature to 400 degrees Fahrenheit (200 degrees Celsius).
  • In a saucepan, mix together 1/2 cup of sugar, cornstarch, and cinnamon. Whisk the ingredients until they are well combined. Add the sliced peaches (refer to Editor’s Note) and lemon juice to the mixture, making sure to toss them until the peaches are thoroughly coated.
  • To cook the filling, heat it on a medium flame, stirring consistently until it thickens and comes to a boil. Let it boil for a minute. Transfer the mixture into a 2-quart casserole dish that hasn’t been greased. Keep the mixture warm in the oven while you prepare the topping.
  • To create the dough, mix together flour, 1 tablespoon of sugar, baking powder, and salt in a medium bowl. Ensure that the ingredients are well-combined. Following this, incorporate the shortening into the mixture until it appears like fine crumbs. Finally, add the milk and stir until the mixture is evenly moist.
  • Take out the peach filling from the oven and place spoonfuls of the dough evenly on top of the peaches in six equal portions.
  • Place the cobbler back into the oven and bake it until the topping has a golden brown color, which should take approximately 25 to 30 minutes.

Notes

To peel peaches, fill a large saucepan with water and bring to a boil. Turn off the heat and add the peaches. Let the fruit sit in the hot water for one minute to loosen the skins. Remove peaches with a slotted spoon and transfer to a bowl of ice water. When peaches are cool enough to handle, slip off the skins and slice.
