Whats your favorite childhood dish? For me there’s barely a more nostalgic childhood comfort classic than Spaghetti Bolognese.

Luckily the vegan version is just as good as the original which is why I probably eat it once every other week

Here is a simplified version. Feel free to add any veggies you have on hand, like mushrooms, eggplant, zucchini etc. Replace tofu with TVP, vegan meat crumbles, tempeh or lentils.

If you have some extra wine in your house (like I do at the moment ), try adding a bit of it to the sauce as well!

Ingredients :

  • 1/2 a block extra firm tofu, pressed and crumbled *
  • 1 medium onion
  • 4 large garlic cloves
  • 2-3 celery sticks
  • 1 medium carrot
  • 1 tbsp tomato paste
  • 1 large can chopped tomatoes (fire roasted if possible) or 2 smaller ones
  • 1 tbsp olive oil (optional)
  • 1 tbsp tamari sauce or coconut aminos
  • 1 tbsp balsamic vinegar
  • 1 tsp of Italian seasoning, dried oregano and basil each
  • Salt and pepper to taste
  • Optional: about 1/4 to 1/2 cup red wine

Plus:

  • Spaghetti of choice (I used whole wheat)
  • Vegan parmesan
  • Fresh arugula, spinach or basil

Method:

1- Peel/clean and finely dice onion, carrot, celery and mince garlic.

2- Press tofu to remove extra liquid and crumble it with your hands or a fork.

4- Heat up olive oil in a large sauce pan and sauté onions until lightly browned, add tofu, celery, carrot and garlic and keep sautéing until all excess water has cooked out and everything is fragrant, softened and caramelized.

5- Stir in tomato paste and cook for another minute. If you’re using red wine deglaze the pan with it now, then add canned tomatoes, balsamic vinegar, tamari sauce and dried herbs.

6- Cover with a lid and let simmer on low heat for about 20 minutes or longer.

7- Occasionally stir to avoid burning. If more liquid is needed, add splashes of water (or veggie broth) or ideally some of your pasta water.

8- While the sauce is simmering, prepare your spaghetti or other pasta of choice.

I like serving mine with some extra greens, fresh basil and vegan parmesan. Enjoy! 🍝
