The dish I’m sharing with you today was actually not meant to be shared on here. But it turned out really yum and easy to make so I thought oh why not!
I have been planning on making a French toast casserole for the longest time (this is not it haha) but never really got around to it. Then I made a banana bread the other day, I wasn’t too happy with. It wasn’t bad but it wasn’t really good either. It happens right?
So I thought why not use the idea of a casserole on that mediocre banana bread.
Of course you can use the same method with any other stale bread you may have at home!
Ingredients :
French Toast liquid mixture:
- 1/2 a package of silken tofu
- 1 cup vanilla almond milk (or any other plant milk)
- 2 tbsp maple syrup
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tbsp nutritional yeast +
- a pinch of Kala Namak salt
(for a hint of that eggy flavor or just use a pinch of regular salt)
Plus:
- About 3/4 of a banana bread loaf or stale bread of choice
Method:
1- Blend mixture until smooth (I used my smoothie blender for this).
2- Lay slices or pieces of bread in a small casserole dish and pour mixture over it, making sure everything is evenly covered and let it soak for a bit.
3- Preheat oven to 400 F/200 C in the meantime.
4- Bake for about 30 minutes.
7- Depending on the bread you’re using you might want to increase baking time to 40-45 minutes to crisp up the bread. Since I used soft banana bread this wasn’t necessary.
8- I served mine warm with some frozen raspberries and a tiny drizzle of maple syrup.
