This recipe is delicious, for the pasta sauce I kept it simple and light by using lemon zest, garlic, basil and pasta water. You could use any pasta shapes I love using linguine with prawns it works really well.
- 3 salmon fillets
- 12 Jumbo Raw Whole King Prawns
- zest of 1 lemon
- 4 garlic cloves, finely chopped
- pasta water
- 1 glass of white wine (optional)
- I used lemon and thyme salt
- 1 tbsp olive oil
- 1 tbsp of basil, finely chopped and a few leaves for garnishing
Heat the oven to 200c and bake the salmon with a bit of olive oil, ses as on well (cooking time 12-15 minutes). Flake the salmon with a fork once it is cooked.
In the meantime cook the pasta as per instruction on a pan. Sauté the garlic, lemon zest for 1 minute, add the wine, pasta and prawns.
Cook for 6-8 minutes until the prawns are fully cooked. Add the salmon and cooked pasta, season well. Sprinkle some fresh basil leaves and Parmesan.
