I love this curry, it is soft and silky and full of flavours. I usually serve it with rice and a veggie side. Don’t worry if you don’t have any chaat masala spice you can use curry powder instead. I kept it mild but you can adjust the chillies to your taste.
- 1 tbsp coconut oil
- 800g Chicken thighs boneless and skinless
- 1 red and green chilli, finely chopped
- 1 tsp mustard seed
- 6 cardamom pods
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp garam masala
- 1/2 tsp chaat masala or curry powder
- 5 garlic cloves
- 1 can coconut milk
- Coriander for garnish
Sauté the onion with the coconut oil for a few minutes. Add the garlic, mustard seeds and chillies and cook for one minute. Add all the other spices and stir add the chicken and coat it with the mix. Add the coconut milk and simmer for an hour.
