I am cooking a full roast today, it will definitely includes roastpotatoes I coat my potatoes with flour which makes them extra crispy! I use King Edwards they are perfect for roasting!
Ingredients
- 1kg potatoes
- 100g lard
- 6 garlic cloves (keep as whole)
- 2 sprigs of rosemary
- 2 tbsp plain flour
- Salt
Instructions
Cut the potatoes in half or quarter if they are big. I always salt the water bring to the boil then simmer for 8 minutes (uncovered) until they are slightly soft from the outside (I use a knife to test).
Meanwhile add lard on a baking tray and put in a fan oven (200c). Drain and shake them in the colander to fluff them up and put them back in the saucepan and add the flour and shake gently to coat the potatoes.
I don’t add the flour in the colander otherwise the flour will go everywhere! Transfer the potatoes carefully onto the baking tray as the fat is really hot! then turn and roll them around so they are coated all over I add two garlic cloves and rosemary.
Overall cook them for 50 minutes, turn them over every 20 minutes. They should be crispy and golden
