Chocolate Chip Cookie Pie Recipe
Did you know it is national chickpeas day today! I actually just found out myself. I love chickpeas!
They’re so healthy, versatile and yummy. Even in sweet recipes like this one!
I’ve made plenty of chickpea cookies and brownies/blondies before but this is by far my favorite recipe to date! When I made this cookie pie, I joked and said it pretends to be healthy by using chickpeas, oats, almond butter and apple sauce….and then it takes a bit of an unhealthy sugar and chocolate chip turn! Oops but it doesn’t taste like your typical ‘healthy’ dessert. It’s just….yum!
Plus it couldn’t be easier to make! Simply blend everything in a food processor and bake it!

Ingredients :
- 2 cups of chickpeas, cooked and rinsed well
- 1 cup quick oats
- 1/2 cup almond butter
- 1/3 cup apple sauce
- 1/2 cup coconut sugar
- 1/2 cup organic brown sugar
- 2 tbsp corn starch
- 1/2 tbsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- Pinch of salt
- 1/2 cup vegan chocolate chips (or more)
Method:
Preheat oven to 350 F / 175 C.
1- Add all ingredients, except chocolate chips, to a food processor and blend until smooth. Let cookie batter cool down for a few minutes before folding in the chocolate chips. *
2- Add to a baking dish of choice (I used a small cake spring form), greased if necessary, and bake for about 45 minutes.
3- Let cool down a bit before cutting and enjoy
*The blending process warms up the dough so the chocolates chips will melt if you don’t let it cool down. Decrease baking time of you’re using a bigger baking dish.
