Soy curls whit homemade
How about some colorful and delicious Sweet and Sour Stir-Fry for dinner tonight! Homemade sweet and sour sauce not only tastes much better in my opinion but you’re also in control of how much and what kind of sweetener you want to use. And of course no wanted additives!
I used soy curls for this recipe but you can make it with tofu, tempeh, chickpeas, or just veggies!
Soy curls whit homemade sweet and sour sauce
Ingredients:
- 1/2 cup pineapple juice
- 1/2 cup chopped pineapple
- 1/4 cup tomato paste (single concentrated)
- 1/4 cup rice vinegar
- 1/4 cup maple syrup (less to preference)
- 1 small piece of ginger (about 1/2 tbsp grated)
- A couple of garlic cloves
- 2 tbsp coconut aminos or light soy sauce
- 2 tbsp corn starch
- 1 cup of water
- Plus:
- Salt to taste
- Ground chili flakes (optional)
Method :
- Add all ingredients to a blender, and blend until smooth.
- Bring sauce to a boil in a small sauce pan, stirring continuously until it has thickened. Add additional salt to preference, and chili for some extra kick.
- You can also use coconut or another type of sugar instead of maple syrup.
- If needed, add more water to thin out the sauce.
- Add sauce to your stir-fry, or use as a dipping sauce for spring rolls etc.
- Store remaining sauce in the fridge.
For the Stir-Fry I used:
- 1 cup Soy curls (check my soy curl reel to see my favorite way to prepare them)
- Broccoli
- Multi-colored peppers
- Carrot
- Sweet onion
- Chopped pineapple
- 1/2 tbsp coconut oil
- Served over jasmine rice
