I was kindly gifted some spice kits from @spicentice , they make blended spice kits and rubs which include recipes, they are easy to use and extremely tasty. They are also suitable for vegetarians and vegans. I used their kit Gourmet chips & wedges on the potatoes and they were so tasty!
This traybake needs minimal prep time and requires hardly any washing up! I used peppers which are in season, courgette and aubergine would also be a great addition.

- 10 good quality sausages
- 4 shallots, halves
- 3 garlic cloves, whole
- 1 red, green, yellow pepper, sliced
- A few sprigs of fresh thyme
- 4 large potatoes
- 1 spice kit Gourmet chips & wedges
- Salt
