Have you ever tried Sockeye salmon? It is a type of salmon mainly found in the northern Pacific ocean. It has a deep color and and is so rich in flavors. I used artichoke hearts, garlic, lemon and asparagus for this traybake. I crumbled over some feta cheese added lemon zest before serving and it worked beautifully.

Ingredients

  • 1 sockeye salmon side (450g)
  • 3 garlic cloves, finely chopped
  • 1 lemon, sliced
  • ​​1 bunch of asparagus
  • 1 jar of artichoke hearts
  • 1/2 jar of green olives
  • Few sprigs of thyme
  • 1 tbsp olive oil
  • Fresh and zesty salt

Instructions

Place the salmon on a baking tray, drizzle with olive oil, add the olives, asparagus, artichoke hearts, garlic and lemon slices. Season well and add the thyme. Bake for 15 minutes.
