This recipe is easy to make and it is low budget, you only needs a few ingredients. I wrapped the chicken in prosciutto ham to give extra flavors. I served mine with steamed broccoli on the side.
- 4 chicken breasts
- 12 slices of prosciutto ham
- 2 shallots, finely chopped
- 4 garlic cloves, finely chopped
- 300g orzo
- 400g cherry tomatoes
- A few sprigs of thyme
- Olive oil
Heat the oven to 190c.
Wrap 3 slices of prosciutto around each chicken breast, place onto an ovenproof baking tray drizzle some oil and bake for 30 minutes.
In the meantime cook the orzo as per instruction on the pack. *I always keep some of the pasta water to make the sauce. Sauté the shallot and garlic, season and cook for a few minutes. Add the cherry tomatoes, cook for 15 minutes, add some of the pasta water. Drain the orzo and add it to the tomato sauce. Serve with the chicken, I sprinkled some Parmesan and added some fresh thyme.
