Is there anything better than a bowl of meaty pasta in a rich tomato sauce? I like to remove the skin of the sausages then I use a wooden spoon to break them in chunks. I always add some of the pasta water to the sauce, it gives more flavours and texture.
Ingredients
8 sausages
- 400g pasta
- 1 large onion, finely chopped
- 2 tins of tomatoes
- 1/2 tin of water
- 4 garlic cloves, finely chopped
- 2 tbsp extra virgin oil
- salt
- Fresh basil, finely chopped
- A few basil leaves for garnishing
- Parmesan for serving
Instructions
In a large saucepan with 1 tbsp of olive oil, sauté the onions for a few minutes.
Add the garlic, sausages, the tin of tomatoes, season well and simmer slowly for 1 hour. Cook the pasta as per instruction on the pack.
Toss the pasta in the sauce. I like to serve mine with plenty of Parmesan and a few basil leaves.
