If like me you like salmon dinners you will love this recipe. It is such an easy and healthy one packed with flavours. For the mango salsa, to make it easier I used a pack of mango chunks. It could also be made with any white fish. I served mine with rice and steamed tenderstem broccoli.

Ingredients

  • 4 salmon fillets 
  • 2 tsp paprika
  • 2 tbsp olive oil, I used 
  • 1 small red onion, diced
  • 1/2 Mango or 1 pack of mango chunks (250g)
  • 1/2 red chilli, finally diced (optional)
  • 1 tomato, diced
  • 1 tsp fresh chopped parsley or coriander
  • 1/2-1 lime juice

Instructions

Make the salsa by mixing together the mango, avocado, red onion, chilli, tomato, parsley and lime juice. Mix the Cajun and olive oil and coat the fish with the marinade. Bake in a fan oven 200c for 10-15 minutes until the fish is nicely cooked. Plate up the fish and top with the salsa and any sides of your choice.
