This is one of my absolutely favorite meal to make! Nduja is a spicy, spreadable sausage from Italy. It works really well with pasta and prawns.
Ingredients
- 400g linguine
- 600g Jumbo King Prawns, remove shells & devein
- 1 onion, finely chopped
- 1-2 tsp nduja pesto
- 4 garlic cloves, chopped
- 500g cherry tomatoes
- 2 tbsp olive oil
- 100ml pasta water
- Parmesan, grated
- Handful of rocket
Instructions
Cook the pasta as per instruction on the pack. **keep some of the pasta water to make the sauce.
Sauté the onion until golden, add the garlic, nduja, season and cook for a few minutes. Add the cherry tomatoes, some pasta water and cook for 15 minutes.
Add the prawns and cook for another 6-8 mins until the prawns are cooked. Toss the pasta, and serve with grated Parmesan and rocket.
