Bye bye dry scones….hello buttery soft, deliciously crumbly Strawberry Scones! If you want to bake something sweet this weekend, I suggest you give these a try. They’re actually my favorite sweet treat I’ve baked all year! Okay maybe tied with the cinnamon rolls but still . Happy Friday everyone!
Ingredients:
1 to 1 and 1/4 cups chopped fresh strawberries
2 cups all purpose flour, spooned and leveled
1/2 cup vegan butter (or 1 stick)
1/2 cup raw cane sugar
3 tsp baking powder
1 cup coconut milk (can) plus 1 tbsp for brushing
2 tsp vanilla extract
Pinch of salt (unless you’re using salted vegan butter)
Icing:
3/4 cup powdered sugar
1 tbsp coconut milk
Method:
1- Place vegan butter in the freezer for at least 30 minutes before making your scones.
2- Cut strawberries into small pieces.
3- Add flour, sugar, baking soda, and salt (if using) to a mixing bowl.
4- Cut frozen butter into small cubes, then work those into the flour mix with your hands (or a pastry cutter or large fork) until dough reaches a coarse and lightly crumbly texture.
5- Fold in coconut milk, vanilla extract and strawberries, and stir just until combined. The dough will be quite sticky, use a little extra flour for dusting if needed when shaping but try to avoid it.
6- Place dough on a small cutting board lined with parchment paper, and form a round about 1 inch thick (a little thicker then your thumb) disk.
7- Place that in the freezer for another 30 minutes. This step will help when you cut the scones into shape, and avoid too much spreading while baking.
8- Preheat oven to 400 F/200 C.
9- Take scone ‘disk’ out of the freezer, cut it into 8 rectangles, and carefully place them on a lined baking sheet. I just keep them on the same parchment paper.
10- Bake scones for 20-25 minutes or until light golden in color.
11- Prepare icing by whisking together powdered sugar and coconut milk.
12- Let the scones cool on a wire rack, then drizzle them with the icing, and enjoy!
