I don’t know about you but I can’t ever say no to pizza! Let’s give it an autumnal twist with this yummy Thin Crust Pizza with Butternut Squash, Spinach, Caramelized Pear and homemade Vegan White Cheese Sauce!

Creamy Broccoli Pesto Soup with Pan Fried Gnocchi
Ingredients:
- Pizza dough for 1 medium size pizza
- 1 cup butternut squash, diced
- 1 large pear, sliced thinly
- 1 cup fresh spinach
- Olive oil
- Salt to taste
Optional:
- A few chopped pecans or walnuts, raw or caramelized
- A handful of sage leavesCheesy sauce
- 2 tbsp vegan butter
- 2 tbsp tapioca starch
- 1 cup extra creamy oat milk
- 1 tbsp nutritional yeast
- 1/2 tsp garlic powder
- A splash of white wine or apple cider vinegar
- Generous pinch of salt
Method:
- Preheat oven to 500 F/250 C.
- Melt butter in a sauce pan. Whisk in tapioca flour first, then oat milk. Add remaining ingredients and keep stirring until you have a gooey, bubbly cheese sauce.
- In a non-stick skillet, caramelize pear slices from both sides, and set aside.
- In the same pan, repeat the same step with the butternut squash pieces until they have softened. (I use a drizzle of olive oil for both)
- Add spinach to the hot pan to wilt it. Season butternut squash and spinach with salt.
- Roll out pizza dough to desired shape and thickness, spread generously with cheese sauce, and decorate with caramelized pear, butternut, spinach and if using chopped pecans or walnuts.
- Bake for about 10-12 minutes (longer for a thicker crust) or until crust is golden.
- For the crispy sage leaves, fry them with a bit of olive oil for a minute until crispy, and set aside.
- Top pizza with sage, and enjoy!
Notes:
I used a homemade whole wheat dough but store bought works as well.
Store any leftover cheese sauce in the fridge. It will thicken when it cools.
