The flavours in here are so amazing, I think I’m actually obsessed! Also this is so easy and quick to make, anyone could make this! I loveeee these Chinese spiced chickpeas so much!
Ingredients:
– 1 medium onion, diced
– 250g frozen mixed peppers
– 1 can chickpeas, drained & rinsed
– 2 tsp garlic granules
– 1/2 tsp ground ginger
– 2 tsp Chinese five spice
– 3 tbsp dark soy sauce
– 1-2 tbsp golden/maple syrup
– 3 spring onions, sliced
Method:
1. Sauté the onion on a high heat setting in a non stick frying pan using a little oil (or water for oil free) until translucent.
2. Stir in the frozen mixed peppers and cook for 5 mins until hot. (It’s okay to leave the water from the defrosted peppers in there it’ll help with the sauce)
3. Stir in the chickpeas, then the garlic granules, ground ginger, soy sauce and maple/golden syrup, stirring frequently allowing it all to bubble until the sauce has reduced down and thickened.
(go ahead and add a little bit of water for the sauce if you need to)
4. Serve with rice and sprinkle with sliced spring onions. Enjoyyyy!
