Feeling Festive with this bowl of Gingerbread Porridge – with banana Alpro coconut yoghurt (my fave), pomegranate, & sorry I had to devour these cute little gingerbread men, luckily they’re not sentient beings
Ingredients:
- 80g oats
- pinch of salt
- 1tsp ground ginger
- 1/4tsp ground cinnamon
- 1 medium banana, sliced in 1/2
- splash of plant milk (I use oat milk)
- 1tbsp maple syrup/molasses
- 1tsp vanilla extract
Method:
Pour your oats into a small saucepan, then stir in the salt, cinnamon, ginger & 1/2 diced banana, then pour in a little boiling water to cover and soak for 2 mins until gloopy.
Pour in a splash of milk (depending on your desired consistency), the maple syrup & vanilla extract, mix well to combine.
Heat it up on the hob and cook for 5 mins until hot and creamy, add more milk for a creamy consistency, or cook for longer for a thicker consistency.
Serve in your bowl, then top with the other 1/2 of your banana and desired toppings! Enjoy!
