This is one of my favourite midweek meal, it is healthy and nutritious! Marinade the salmon for 20 minutes if you can it brings more flavours!
Ingredients
Serves 4
- 4 fillet of salmon I used
- 400g noodles
- 1 tbsp macadamia nut oil
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 1/2 inch piece ginger, grated
- 1 red and chilli, finely chopped
- 3 garlic cloves, finely chopped
- 1 pack of tenderstem broccoli spears, sliced in half lengthways
- 6 spring onions, finely chopped
- Sesame seeds to garnish
For the marinade
- 1 tsp garlic and ginger paste
- 5 tbsp light soy sauce, I used
- 1-2 tbsp sesame oil, I used
- 2-3 tbsp honey, I used
- 1 red chilli, finely chopped (optional)
Instructions
Make the marinade by mixing the soy sauce, garlic and ginger paste, honey, and sesame oil. Bake the salmon for 10-12 minutes in a fan oven (200c).
Alternatively you can pan fry the salmon, skin down for 3 mins, flip the salmon over and cook for another 5-8 mins depending on the size of the fillets. In the meantime, Cook the noodles as per instructions on the pack.
I used my cast iron sauté pan and added the macadamia nut oil, garlic, ginger, 1/2 of the spring onions and the chillies and cook for a couple of minutes.
Add the broccoli a little of water cover and steam for 5 minutes. Remove the lid, add the soy sauce and sesame oil and cook for a couple of minutes.
Toss the noodles with the vegetables and sprinkle the remaining of the spring onions. Place the salmon on top of noodles and serve.
