Bye bye Monday Blues with this Salted Caramel Apple Cake!

I thought why not start the week with a sweet treat! This is one of my favorite dessert recipes because it’s easy to make, requires only simple ingredients you probably have at home, it is pretty healthy but still decadent – because of the delicious 3 ingredient caramel sauce . Wishing everyone a good Monday

Ingredients :

3 small to medium sized apple
1 cup oat flour
1 cup whole wheat flour
1 cup unsweetened apple sauce
1/4 cup almond butter
1 tsp cinnamon
1 tsp vanilla extract
1/2 tbsp baking powder
1/2 tbsp apple cider vinegar
2 flax eggs
(2 tbsp ground flax seeds + 4 tbsp water)

Salted caramel sauce:

1/2 cup coconut sugar
1 cup coconut milk (can)
Pinch of sea salt

Method:

1- Preheat oven to 350 F/175 C.

2- Make flax eggs by mixing water and ground flax seeds and let sit for 10 minutes.

3- Peel and core apples, chop two of them and slice the third.
Add flour and cinnamon to a mixing bowl, then baking powder and pour apple cider vinegar on top.

4- In a separate bowl stir together apple sauce, almond butter, vanilla extract and flax eggs.

5- Add wet ingredients to dry ingredients and stir until just incorporated. Do not over mix!

Make caramel sauce:

1- Add coconut sugar and coconut milk to a small sauce pan and heat up until sugar has melted and sauce begins to thicken (use low heat to avoid burning). Add salt at the end.

2- Pour about half of the caramel sauce into a small container and set aside. Sauce will thicken once it cools down.

3- Add chopped apples to the remaining sauce and let simmer for another minute.

4- Fold the caramel apple mix into the cake batter and pout it into a lightly greased cake pan*. Top with apple slices and some more caramel sauce.

5- Bake for 60 minutes (or until inserted tooth pick comes out clean).
Let the cake cool down, serve with any remaining caramel sauce and enjoy!

Tips:

*I use a 7 “/ 18 cm cake pan
When using a larger pan, increase measurements or reduce baking time so you don’t overbake the thinner cake.
