Have an extra can of pumpkin purée sitting in your pantry? Or just need a new, easy pasta recipe? Try this delicious One-Pot Pumpkin, Sage and Pearl Onion Pasta!
As the name says, all you need is one pot – or dutch oven in this case – 30 minutes, and 10 main ingredients. No blending, no boiling pasta separately, and it makes the most creamy, comforting and delicious meal!
Ingredients:
- 1 pound (500g) package of orecchiette or pasta of choice
- 1 can pumpkin puree
- 10 pearl onions
- 3 large garlic cloves, minced
- 10 small sage leaves
- 1 tbsp vegan butter
- 5 cups vegetable broth
- 1 cup plain extra creamy oat milk
- 1/4 cup nutritional yeast
- 1 tsp thyme
- 1/2 tsp salt or to taste (depending on the broth you are using)
- Ground nutmeg and black pepper to taste
Plus:
1 (or more) additional cups of water or vegetable broth as needed
Optional:
Vegan parmesan
Roasted pumpkin seeds
Method:
- Cut pearl onions in half, and peel off the skin.
- Heat up vegan butter in a dutch oven, and sauté onions until lightly browned, fragrant and caramelized. Use low heat to avoid burning and don’t let the onions get too dark.
- Add sage leaves and minced garlic and sauté everything for a couple more minutes.
- Stir in pumpkin puree, vegetable broth, oat milk, thyme, nutritional yeast and salt.
- Add pasta, and bring everything to a boil.
- Lower the heat, cover and cook until pasta is al dente. Orecchiette take about 14-15 minutes. If you’re using different pasta, adjust cooking time accordingly.
- Stir occasionally to avoid sticking, and add more liquid (water or broth) if needed.
- When pasta is done, season to taste with black pepper and freshly ground nutmeg.
- Top with vegan parmesan and roasted pumpkin seeds, and enjoy!
Tip:
If you don’t have pearl onions, replace them with shallots or sweet, chopped onion
