Carrot Cake Pancakes Recipe

Ingredients :

  • 1 cup organic rolled oats
  • 1 medium carrot (1/2 cup grated)
  • 1/4 cup walnuts
  • 1 tbsp ground flax seeds
  • 1 cup almond milk
  • 1/2 tsp baking powder and baking soda
  • 2 tsp apple cider vinegar
  • 1-2 tbsp raisins
  • 1/2 tbsp sweetener of choice
  • 1 tsp cinnamon

Method:

1- Grate carrot, blend oats into flour and chop walnuts. (Or coarsely grind them up as well)

2- Add oat flour, carrots, walnuts and flax seeds to a mixing bowl and stir.

3- Add baking powder, baking soda and apple cider vinegar (those will react with each other and get foamy!)

4- Then add sweetener of choice, almond milk, cinnamon and raisins.

5- Stir until everything is combined and let pancake mix sit for 10-15 minutes to thicken.

6- Bake in small batches on a non stick skillet (low to medium heat) for 3-4 minutes on each side.
