Choc Hazelnut Raspberry Cookies (vegan) Reipe
Ingredients:
Dry:
- 1 cup almond meal
- 1 cup hazelnut meal
- 3/4 cup of oat flour
- 1 cup coconut sugar
- 1/4 cup cocoa powder
- 1 tablespoon ground flaxseed
- Pinch of salt
Wet:
- 1/3 cup coconut oil, melted
- 1/4 cup almond milk
- vanilla essence *Optional
- Handful of frozen raspberries
- Handful of dairy-free chocolate, chopped
- Handful of hazelnuts, chopped in half
Method:
Preheat the oven to 180 degrees Celsius, fan-forced. Line a baking tray with non-stick paper
In a large bowl, combine the dry ingredients together
Add in the wet ingredients and stir until a cookie dough forms
Divide the mixture into 12 balls, arrange them on the baking tray and flatten slightly.
Top each cookie with the chocolate chunks, raspberries & hazelnuts
Bake in the oven for 12-14 mins. Remove from the oven and allow them to cool before serving. They will firm up as they cool down
