Homemade Granola Bars! These diy treats are nutty, filling, and chewy. Plus, you can take the recipe any way you want to make many different tasty variations of them (any nut/seed butter works; add in pecans, peanuts, almonds, walnuts, or any other nut; dark chocolate chips are also a must!)
Ingredients:
- 1.5 cups milk (plus 1-2 tbsp sugar for sweeter bars)
- 1/2 cup natural peanut butter
- 1 tablespoon pure vanilla extract
- 3.5 cups quick cooking oats
- 3 tablespoons seeds (I used chia, but you can sub in flax or sunflower seeds.)
- Chopped nuts
- Dark chocolate chips
Method:
Mix the milk, peanut butter, vanilla extract, and a pinch of salt together in a large bowl.
Add the oats, seeds, and chopped nuts. Stir until fully combined.
Transfer the batter into an 8×8 baking pan (lined with parchment paper), smooth out the top so it’s even, and press in chocolate chips. (*You can also add the chopped nuts at this step instead of mixing in.) Bake at 350° for ~25 minutes, until the edges become golden brown.
Let them cool in the pan for 10 minutes after removing from the oven.
Then, remove from the pan, and cool completely.
Cut into bars, and store in airtight containers at room temperature or in the fridge/freezer for future treats.
