Baked Panko-Crusted Tofu with Spicy Scallion and Garlic Sauce

This Baked Panko-Crusted Tofu with Spicy Scallion and Garlic Sauce over Brown Rice and Broccoli is a great way to enjoy a takeout style meal…but much healthier! And if you’re short on time and don’t want to bread and bake the tofu, you could simply stir-fry it, and glaze it with the sauce. Either way, it’s a super yummy dish!

Ingredients:

Tofu Ingredients:

1 block extra-firm tofu, lightly pressed
1/2 cup panko bread crumbs
2 tbsp flour of choice
1 tbsp cornstarch
1/4 to 1/3 cup of unsweetened plant milk
1/4 tsp of garlic, onion, paprika, and ground chili each
A few pinches of salt

Avocado or coconut oil (spray)

Sauce Ingredients:

1 tbsp avocado (or other cooking) oil
2-3 scallions
4 garlic cloves
1/2 tbsp chili flakes (more or less to preference)
2 tbsp dark soy sauce
1 tbsp rice vinegar
1 tbsp brown sugar
1 tbsp cornstarch, diluted in 1 cup of water

Method:

Tofu Method:

1- Preheat oven to 425 F/ 220 C.

2- Cut tofu in half horizontally and ‘dab away’ any excess moisture with a clean kitchen or paper towel. For a “meatier” texture, freeze the tofu overnight, then carefully press it once thawed before using.

3-Sprinkle it with salt from all sides.

4- Prepare the batter by whisking together flour, cornstarch, spices, and plant milk in a shallow bowl until smooth. Add bread crumbs to a second shallow bowl.

5- Generously cover both tofu pieces with the batter, then press them into the bread crumbs. Make sure all sides are evenly coated.

6- Bake tofu on a lined baking sheet for 20 minutes, flip it over, and bake for another 10-20 minutes until lightly browned and crispy.

Optional: Spray the breaded tofu with a bit of oil before baking or drizzle some oil on the baking sheet.

Sauce Method:

1- Finely dice garlic and thinly slice the scallions, white and green parts divided.

2- Heat up oil in a small saucepan.

3- Fry minced onion and white parts of the scallion for 1 minute until fragrant, then add chili flakes, soy sauce, sugar, and rice vinegar, and bring everything to a boil. Whisk in cornstarch slurry, and keep stirring until sauce begins to thicken. Simmer for another minute, then add remaining scallions.

4- Cut tofu into slices, top with the sauce, and serve over some rice and broccoli. Enjoy!
