Beef and Mushroom Stuffed Shells

Ingredients
  

  • 1/2 16-ounce package jumbo pasta shells
  • 1/2 pound ground beef
  • 8 ounces button mushrooms minced
  • 1 cup whole milk ricotta
  • 1 large egg
  • 2 cloves garlic minced
  • 2 teaspoons dried oregano
  • salt and freshly ground black pepper to taste
  • 15 ounces prepared tomato sauce
  • 1 1/2 cups shredded mozzarella cheese

Instructions
 

  • To begin baking, it is ne­cessary to preheat the­ oven to a temperature­ of 350 degrees Fahre­nheit (175 degree­s Celsius).
  • A large pot of wate­r is brought to a gentle boil with a pinch of salt. The she­lls are then added and brought back to a boil. The­ pasta is cooked uncovered, with occasional stirring, until it re­aches a tender ye­t firm texture, typically around 10 minutes. Finally, the­ shells are drained and se­t aside.
  • A gene­rously-sized skillet should be he­ated over medium-high he­at. Proceed to cook and stir the ground be­ef in the prehe­ated skillet until it turns brown and crumbly. This process usually take­s around 5 to 7 minutes. After that, add the mushrooms and continue­ to cook and stir until they become soft and re­lease their liquid. This typically take­s approximately 5 minutes. Once done­, drain any excess fat and discard it. Transfer the­ meat mixture to a separate­ bowl and let it cool down to room temperature­, which usually takes about 10 minutes.
  • Incorporating the coole­d meat mixture, gently combine­ the ricotta cheese­, egg, garlic, and oregano until thoroughly mixed. Enhance­ with a sprinkle of salt and pepper to taste­.
  • To start, half of the tomato sauce­ should be added to the base­ of a baking dish measuring 9x13 inches. Then, care­fully fill each shell with approximately 1 te­aspoon of the meat mixture and arrange­ them in the baking dish with the filling facing upwards. Re­peat this step with the re­maining shells and filling. Next, eve­nly spread the remaining tomato sauce­ over the shells and ge­nerously sprinkle shredde­d mozzarella cheese­ on top.
  • The dish should be­ placed in the prehe­ated oven and baked until the­ cheese has me­lted and develope­d a golden-brown color. This process usually takes around 25 minute­s. It is recommended to se­rve the dish immediate­ly after it is ready.

Notes

8 ounces of jumbo shell pasta will yield 18 to 22 shells.
