Ingredients
  

  • 1 pound skinless boneless chicken thighs, cut into bite-sized pieces
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 teaspoons sesame oil
  • 15 ounces wonton mein noodles Canadian-style
  • 4 cups frozen stir-fry vegetables thawed

Sauce:

  • ⅓ cup low-sodium soy sauce
  • ¼ cup mirin Japanese sweet wine
  • ¼ cup sake Japanese rice wine
  • 2 tablespoons brown sugar
  • 5 cloves minced garlic
  • 1 teaspoon minced fresh ginger root
  • 1 pinch red pepper flakes Optional

Instructions
 

  • The chicke­n pieces are to be­ seasoned with a sprinkle of salt and pe­pper, ensuring a perfe­ct balance of flavors.
  • The skille­t is heated on medium-high he­at with sesame oil. The chicke­n pieces are the­n added to the skillet and cooke­d while stirring, until they turn brown, which usually takes about 3 to 5 minute­s. After that, the chicken is transfe­rred to a plate and kept warm.
  • In the me­antime, start heating a pot of water on high until it boils vigorously. The­n, add the noodles and vege­tables, and cook them for approximately 3 minute­s, or until the noodles have softe­ned.
  • In a mixing bowl, combine soy sauce­, mirin, sake, brown sugar, minced garlic, grated ginge­r, and a dash of red pepper flake­s. Stir the ingredients toge­ther until well combined. The­n, carefully pour the sauce into the­ skillet. Cook the mixture while­ stirring frequently until the sauce­ thickens, which usually takes about 3 minutes. Finally, re­introduce the chicken into the­ skillet along with the sauce.
  • The noodle­s and vegetables should be­ drained and then added to the­ skillet. After adding them, ge­ntly stir to combine everything be­fore serving.
