Ingredients:
1 box Classic Cheddar Style Vegan Mac
1 can chili beans, not drained
1 medium zucchini, chopped
1 large carrot, chopped
1 large celery stalk, chopped
1 small onion, chopped
2 cloves garlic, minced
1 tbsp avocado oil
½ tsp each smoked paprika, cumin and coriander
1 tsp salt
Handful fresh basil to serve
Method
In a skillet heat up the oil then add the onion and cook 2 mins. Next add the garlic, carrot, celery and zucchini. Cook 7-8 mins, or until the veggies have softened but are still a bit crunchy.
Stir in the chili beans, spices and salt. Stir and cook 2 mins, until the beans are warmed through.
Add the cooked vegan mac and mix everything together. Cook 1 more min then remove from heat, top with fresh basil and enjoy!
