Strawberry Muffins! These muffins are light, sweet, and filled with delicious, fresh, and sweet strawberries. Plus, they have such a warm flavor and are perfectly spiced. Perfect addition to any breakfast or brunch!
Ingredients:
(Makes 16-18 standard-sized muffins)
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 tablespoons ground cinnamon
- 1/2 teaspoon baking soda
- 1 1/4 cups milk
- 1 1/4 cups granulated sugar (or a sugar alternative )
- 1 cup applesauce or yogurt (substituted for butter in the original recipe)
- 2 eggs, lightly beaten
- 2 cups diced fresh strawberries
Method:
Combine flour, baking powder, baking soda, ground cinnamon, and a dash of salt in a medium-large mixing bowl. Separately, whisk the milk, eggs, and yogurt or applesauce.
Pour the wet ingredients into the dry mixture, and stir until a batter forms.
Add the diced strawberries, followed by the sugar, and mix until well combined.
Use an ice cream scoop to evenly divide batter between 16-18 prepped standard-sized muffin tins.
Bake at 325° for 25 minutes, until tops are golden brown and a cake tester or toothpick comes out clean once inserted into a muffin.
