This is so easy to make, it is nutritious and so delicious. It is so versatile as you can use any veggies, any meat leftovers or seafood. I used miso paste, soy sauce and vegetable stock to make the broth.
Ingredients
- Soba Noodles 160g
- 160g raw king prawns
- 600ml vegetable stock
- 1tbsp miso paste
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1-2 tsp soy sauce
- 1 tsp sesame oil
- 1 red chilli, sliced
- 4 spring onion, finely sliced
- 2 small pack choi, leaves separated
- Handful of edamame beans
Instructions
Mix the miso paste with 600ml vegetable stock and and the garlic, ginger, soy sauce and sesame oil and bring to a simmer. Add the prawns and greens, and simmer for 5 minutes until softened. Add the noodles and sprinkle the chilli, spring onion and sesame seeds to serve.
