My favorite way to use leftover pesto? Pesto Stuffed Grilled Sourdough Cheese Sandwiches!
They’re a great easy lunch, dinner or snack! Especially for those “I don’t feel like cooking” days!
Ingredients:
- pesto
- bread
- your favorite vegan cheese,
- a little bit of vegan mayo or butter.
- Crunchy
- cheesy
- savory
- yum!
Method:
1- Spread 2 slices of bread with vegan mayo or butter on one side.

2- Layer with pesto and cheese.
3- Grill in a cast iron skillet from both sides until crispy and browned.
