Peanut Butter Snack Cake ! This cake is sweet, filled with delicious peanutty flavor, moist, and easy to make. Top with some confectioners sugar for an extra pop of sweetness with each tasty bite.
Ingredients:
- 1 cup granulated sugar
- 1 large egg, lightly beaten
- 1/2 cup light buttermilk
- 1/2 cup creamy peanut butter
- 1 1/2 teaspoons pure vanilla extract
- 6 tablespoons water
- 1/4 cup flavorless oil (I substituted this with a mashed banana, and it added moisture, extra sweetness, and worked perfectly.)
- 1 cup all purpose flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- Pinch of salt
- Confectioners sugar, for dusting on top after cake is cooled
Method:
Combine the buttermilk, egg, sugar, peanut butter, vanilla extract, water, and oil or mashed banana in a large mixing bowl.
Separately, combine the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet, and mix until just combined. Transfer to a prepared cake pan, and bake at 350° for 25-30 minutes, until a cake tester or toothpick comes out clean.
Let cool in the pan for 10-15 minutes, and transfer to a cooling rack to allow cake to cool completely prior to serving. Dust with confectioners sugar and slice it up!
