Burrata is one of my all time favorite creamy cheeses and it’s amazing with roasted tomatoes. I rub the toast with raw garlic into its surface, it gives it the most delicious garlicky punch of flavour.
Ingredients
- 1 burrata cheese
- 500g cherry tomatoes
- 4 sliced of bread, I used sourdough bread
- 1 garlic clove, whole
- A few basil leaves
- Extra virgin oil from
- For seasoning I used salt & peppery
Instructions
Roast the cherry tomatoes with olive oil in a fan oven (180c) for 25 mins, set aside. Toast the bread, rub a raw garlic clove and then drizzle a little bit of olive oil and top with burrata and cherry tomatoes. Drizzle a bit more oil on top of the bruschetta. Serve and enjoy!
