Packed with toffee and marshmallow goodness, these crispie bites are a nostalgic nod to the toffee crisp bars many of us grew up with. The toffee mixture combined with rice crispies and marshmallows creates a treat that is both satisfying and fun to make. For an extra touch, you can drizzle the top with melted chocolate or leave them plain—they’re delicious either way!
Notes on Ingredients
To keep this recipe gluten-free, be sure to double-check the packaging on your toffees and marshmallows. Most basic ingredients like rice crispies and butter are naturally gluten-free, but always check to make sure. I used Sainsbury’s Basics toffees and leftover Toblerone for the chocolate drizzle, which added a luxurious finishing touch. You don’t need anything fancy—this is all about frugal, simple baking!
Key Ingredients:
- Toffees: These create the signature chewiness.
- Marshmallows: Melted into the toffee mixture for extra stickiness.
- Rice Crispies: The base crunch that balances the sweetness.
How to Make Gluten-Free Toffee Crispie Heaven
Follow these six simple steps to create your own chewy, marshmallowy heaven!
- Prep the Tin: Lightly brush your tin or silicone mold with baking spray or oil, then wipe off the excess to ensure easy removal of the treats.
- Melt Toffee Mixture: Add toffee, butter, golden syrup, and milk to a saucepan. Heat gently, stirring until the mixture is fully melted and smooth.
- Incorporate Marshmallows: Stir in the marshmallows until they melt into the toffee mixture.
- Mix in the Crispies: Add the rice crispies and stir until everything is evenly coated in the sticky toffee goodness.
- Mold and Set: Quickly transfer the mixture to your prepared tin or mold and level it out. The marshmallow strands might make it a bit messy, but that’s part of the fun!
- Drizzle and Enjoy: Let the crispies set for about an hour. You can drizzle chocolate on top or enjoy them as they are. Cut them into bite-sized pieces and indulge!
How to Serve Gluten-Free Toffee Crispie Heaven
These treats are perfect for lunch boxes, after-school snacks, or as an indulgent bite with your afternoon coffee. Serve them as they are, or pair them with a light dusting of powdered sugar for an extra touch of sweetness. They also make great party treats—just cut them into smaller, bite-sized portions for easy sharing.
How to Store Gluten-Free Toffee Crispie Heaven
To store these treats, keep them in an airtight container at room temperature. They will stay fresh for up to five days, though I doubt they will last that long! If you prefer them a little firmer, you can refrigerate them, but let them sit at room temperature for a few minutes before serving to soften.

The Best Gluten-Free Toffee Crispie Heaven Recipe
Ingredients
- 250 g Toffees Sainsbury’s Basics
- 50 g Butter room temperature
- 3 tbsp of milk
- 1 tbsp of golden syrup
- 115 g Marshmallows
- 175 g Rice Crispies or similar cereal
Instructions
- Brush your desired tin or mould with baking spray or oil and wipe with a kitchen towel to make sure it is not too oily. If you use silicone moulds always brush them lightly with cake release spray and then wipe off the excess with a kitchen towel even for cakes, choclates etc then your crispy treats will fly out of the moulds unlike one born every minute.
- Add toffee, golden syrup, butter and milk into a saucepan and heat gently. Stir the mixture as it heats until all the ingredients have melted.
- Add marshmallows and stir until they have melted.
- Add the cereal to the pan and make sure it is all well coated with the toffee mixture
- Pour quickly into the tin or mould and level (it will stick to everything in my experience leaving wispy marshmallow strands everywhere)
- Leave to set (about an hour) and drizzle with what ever chocolate you fancy but they are just as nice without too. Cut into sizes required and eat (one is not enough) they will keep for about 5 days if they get that long in an air tight container.
