The Best Dulce de Leche Brownies
When it comes to brownies, combining chocolate with caramel might just be the best thing ever. These dulce de leche brownies offer that heavenly blend of flavors — the deep richness of cocoa mixed with the soft, luxurious sweetness of caramel. Plus, they’re topped with both milk and semi-sweet chocolate chips, creating a perfect textural contrast.
Notes on Ingredients
Each ingredient in this recipe contributes to its depth of flavor and rich texture:
- Cocoa Powder: Unsweetened cocoa powder gives the brownies their intense chocolate flavor.
- Espresso Powder: This enhances the chocolate flavor without making the brownies taste like coffee.
- Dulce de Leche: Adds a creamy caramel swirl that complements the richness of the chocolate.
- Butter: Provides the necessary fat to make these brownies fudgy rather than cakey.
- Vanilla: A good quality vanilla extract adds warmth to the overall flavor.
- Chocolate Chips: The blend of milk and semi-sweet chocolate chips creates a melty, gooey surprise in every bite.
How to Make Dulce de Leche Brownies
- Prep the Pan: Start by preheating your oven to 325°F. Line a 9×13 inch baking pan with parchment paper, ensuring easy removal later.
- Melt the Butter and Mix Espresso: In a double boiler, melt the butter, stirring in the espresso powder. Once smooth, mix in the sugar and cook until glossy. Let the mixture cool for about 20 minutes.
- Mix the Wet Ingredients: Combine the cooled butter mixture with vanilla and gradually beat in the eggs, one at a time.
- Incorporate the Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this to the wet mixture.
- Add the Chocolate Chips: Fold in the milk and semi-sweet chocolate chips, saving a few to sprinkle on top.
- Swirl in Dulce de Leche: After spreading the batter into your pan, add spoonfuls of warmed dulce de leche and swirl through the batter.
- Bake: Bake for 20-25 minutes until set. Allow them to cool for about 35 minutes before cutting into squares.

Ingredients
- 1 cup. all-purpose flour
- 1 3/4. cup unsweetened cocoa powder
- 2 1/2. cups of sugar
- 1 1/3. cups 2 sticks + 6 tbsp butter
- 4 eggs.
- 1/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. espresso powder
- 1 tsp. good quality vanilla
- 1/2 cup. milk chocolate chips
- 1/2 cup. semi-sweet chocolate chips
- 1 jar of dulce de leche
Instructions
- Preheat oven to 325 degrees. Line a 9×13 inch pan with parchment paper set aside.
- In a large double boiler, melt butter then add espresso powder, mixing to dissolve. Add sugar and cook until the mixture becomes smooth and glossy. Remove from heat and allow the mixture to cool for 20 minutes.
- In the bowl of a stand mixer, combine the cooled (it can be luke warm) butter mixture and vanilla. With mixing speed on low add one egg at a time, mixing just until incorporated.
- In a medium size mixing bowl, whisk together flour, cocoa powder, baking soda, and salt. With mixing speed on low, gradually add dry ingredients. Mix until batter is smooth and flour is well included. Remove bowl from stand and fold in your milk & semi-sweet chocolate chips (leaving a few chips for the top of your batter).
- Spread the brownie batter evenly into your baking pan. You may want to warm you dulce de leche un poquito (just a little) if it’s a little stiff. With a spatula or spoon drop in 6-9 spoonfuls of dulce de leche (I like to make rows of 3) gently swirl the ducle de leche through the batter with a knife. Sprinkle remaining chocolate chips on top of your brownie batter.
- 6.Place in oven and bake for 20- 25minutes or until the brownies are set. Remove from oven and let cool for about 35 minutes before cutting. Ahora…Enjoy!
