This recipe is quick and easy and packed with flavours! It makes it a great meal for the whole family! It is quite versatile you can use any veggies you like! I served it with basmati rice and naan bread. Here is how I made it:
Ingredients
For the meatballs
- 500g mince chicken
- 1 tbsp parsley, finely chopped
- 1 inch fresh ginger, grated
- 1 clove garlic, minced
- black pepper
- 2 tablespoons extra-virgin olive oil
For the curry sauce
- 1 onion, finely chopped
- 3 cardamom pods
- 2 tsp garlic paste
- 2 tsp ginger paste
- 3 tsp ground coriander
- 3 tsp ground cumin
- 1/2 tsp red chilli powder (optional)
- 200ml vegetable stock
- 1 tinned tomatoes
- 200g of spinach leaves to add to garnish
- Coriander or parsley to garnish
