Have you tried ham yet??! They are so amazing!!! I chose the dry cure ham which is really meaty and full of porky flavours! This recipe is so simple to make, all ingredients go in one pan! I used a cast iron frying pan as it is ovenproof. Don’t worry if you don’t have one you can use a baking tray instead.
Ingredients
- 4 slices of dry cure ham, sliced into thin slices
- 600g mushrooms
- 4 eggs I used
- 200g mozzarella
- 2 sprigs of fresh thyme
- 1/2 tbsp fresh parsley, finely chopped
- Salt and pepper I used salt
- Extra Virgil olive oil
