Easy peasy rice recipe which goes perfectly with salan,daals,sabzi or simply paired with raita
INGREDIENTS
- 4 medium potatoes (cut in cubes)
- 3 cups basmati rice (I use my baking cups for measurement)
- 1 large onion sliced(or two small)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red chilli powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tsp garam masala powder
- 5-6 cloves
- 6-7 black pepper whole
- 1 inch cinnamon stick
- 4 cardamoms
- 1 star anise(optional, but gives good flavour)
- 1 chicken cube
- 5-7 Green chillies
- 3-4 sabat kashmiri mirch(optional)
- 5 cups plus 3/4th cup Water
- 1 cup water(extra to cook potatoes)
- 5 tbsp oil
INSTRUCTIONS
In a pot add oil, saute onion till golden brown, add potatoes and half green chillies, saute a bit, then add all the mentioned spices, saute till aromatic, add 1 cup water and cover, till potatoes are half done.
Then add 5 n 3/4th cup water and bring it to boil, then add rice and remaining green chillies and let it cook for 7-10mins at medium heat till water dries up.
At this point put damm at lowest flame for 10 mins(cover the lid, using a kitchen cloth or aluminium foil) and that’s it. Now open and give a nice shuffle to the rice. And its ready. Enjoyyyy
