Healthy Oatmeal Banana Bread Recipe
Are you tired of eating plain oatmeal? Or maybe you just don’t like it in the first place? Well here’s my suggestion!
Turn your oats into delicious, easy Blueberry Oatmeal Banana Bread
This recipe makes a rather large batch – I used a 11 x 7 in silicone bread pan – so you get quite a few breakfast slices (or afternoon coffee snacks ) out of it which makes it perfect for meal prep!
I like mine with drizzle of almond butter on top to make it even more yum!
Ingredients :
- 3 cups ground oats
- 1 cup ground almonds
- 3 large, very ripe bananas (mashed)
- 2 cups blueberries
- 1 cup unsweetened oat (or other plant) milk *
- 2 tbsp coconut/date sugar **
- 2 tbsp maple syrup
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- Pinch of salt
Method:
1- Preheat oven to 350 F/ 175 C.
2- Add all dry ingredients to a bowl.
2- Stir in wet ingredients until well combined.
4- Fold in blueberries. (I reserved a handful to top the bread with)
5- Add batter to a silicone (or greased) bread pan.
6- Bake for 45 minutes, turn the oven off and let sit for another 5 minutes.
7- Let cool down slightly and enjoy
*Creamy plant milks work best
**You could also use homemade date paste (soaked and blended dates) but I was out of dates for this one .
