- 1 cup cornmeal
- 1 cup flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup honey
- 1 large egg
- 1 cup milk
- 1/4 cup vegetable oil
- 2 cups shredded sharp Cheddar cheese
- 2 jalapeno peppers seeded and chopped
- 2 mozzarella sticks each cut into 6 pieces
- 12 thin slices jalapeno pepper optional
Preheat the oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups.
In a large bowl, combine cornmeal, flour, baking powder, and salt. Add honey, egg, milk, and vegetable oil; mix until well combined. Fold in shredded sharp Cheddar cheese and chopped jalapeños. Spoon or pour the batter into the muffin cups that have been prepared beforehand.
Add a mozzarella piece to the center of each muffin and one jalapeño slice.
Bake in the preheated oven for approximately 14 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
