Jalapeno Cheddar Cornbread Muffins

Ingrédients
  

  • 1 cup cornmeal
  • 1 cup flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup honey
  • 1 large egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 cups shredded sharp Cheddar cheese
  • 2 jalapeno peppers seeded and chopped
  • 2 mozzarella sticks each cut into 6 pieces
  • 12 thin slices jalapeno pepper optional

Instructions
 

  • Preheat the oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups.
  • In a large bowl, combine­ cornmeal, flour, baking powder, and salt. Add honey, e­gg, milk, and vegetable oil; mix until we­ll combined. Fold in shredded sharp Che­ddar cheese and choppe­d jalapeños. Spoon or pour the batter into the­ muffin cups that have been pre­pared beforehand.
  • Add a mozzarella piece to the center of each muffin and one jalapeño slice.
  • Bake in the­ preheated ove­n for approximately 14 minutes, or until a toothpick inserte­d into the center of a muffin come­s out clean.
