I made this for lunch at the weekend. It is such an easy and healthy recipe packed with flavours. For the mango salsa, to make it easier I used a pack of mango chunks. I made a quick marinade for the fish with paprika and olive oil. It could also be made with any white fish or salmon.

Make the salsa by mixing together the mango, red onion, chilli, tomatoes, parsley and lime juice. Mix the paprika and olive oil and coat the fish with the marinade.

Sauté the garlic and the sliced chilli for a couple of minutes, remove and set aside. Add the seabass in the pan (skin down) for 5 minutes, gently turn the fish over and cook for another couple of minute until the fish is fully cooked.

Plate up the fish and top with the garlic and sliced chilli, add the salsa and any sides of your choice.
