Salted Caramel Chocolate Truffles
Christmas wouldn’t be Christmas without chocolate, am I right? or am I right? These would be pretty cool to share at a Christmas party or for a yummy Christmas gift for someone, or just devour them all yourself
Salted Caramel Chocolate Truffles!! I’ll leave the recipe for you down below, they contain only 6 ingredients
Ingredients:
- 200g pitted dates
- 125g raw cashews
- 3 heaped tbsp smooth peanut butter
- 1tsp vanilla extract
- 1/2 tsp fine sea salt
- 150g bar of vegan chocolate/dark chocolate
Method:
In a food processor, blitz the cashews & salt together until the cashews are fine. Leave in the processor.
Soak the dates in a bowl of hot water for 5 mins (if they are soft already, you can skip this)
Drain the dates, then add them into the food processor along with the peanut butter & vanilla extract. Blitz everything until you form a smooth dough.
Spoon the dough out (I use a little more than a tbsp per ball, which makes around 8 balls) then place them in the freezer for 30 mins until they set.
Melt the chocolate in the microwave using a microwaveable bowl until silky smooth and runny.
Carefully Cover the date balls in the chocolate. (If it’s easier, insert a skewer through the ball, then spoon over the chocolate all around the ball until totally covered)
Place them onto a plate, then decorate your balls by adding some sea salt on top or crushed roasted peanuts.
Place the balls into the fridge to set the chocolate for 30 mins.
Once set, add them all to an airtight container
