Prawn And Chorizo Orzo Traybake

I cook a lot of orzo dishes in the summer with loads of roasted vegetables and chicken or seafood! This is so easy to make and it is delicious and low in calories, it ticks all the boxes!
Ingredients
- 2 packs raw large king prawns
- 200g orzo
- 225g chorizo ring
- 3 garlic cloves, chopped
- 3 tsp oregano
- 3 tsp fresh thyme, chopped
- 2-3 tbsp olive oil
- 2 red onions
- 1 red onion, diced
- 3 peppers, diced
- 2 courgette, diced
- A few asparagus
- A handful of cherry tomatoes
- Salt and pepper
