Happy Friday foodie friends! If you are a chocolate lover and want to sweeten up your weekend you HAVE to try these 7 ingredient super delicious fudgy brownies with chocolate frosting!

The star of this brownie dream and the reason I made this batch and recipe was a massive (really, it was huge!) Japanese sweet potato (use 2 in case yours are normal size ). I wanted to keep the ingredients and measurements as simple as possible. Turns out this was a good idea! The only bit of extra effort is to pre bake or steam the sweet potato(es) first for the sweet potato purée. Then you just add everything to a food processor and done! So easy but so good! Frosting:

Method:

1- Bake or steam your sweet potatoes until soft.

2- Preheat oven to 350 F / 175 C.

3- Add quick oats to a food processor and blend into flour. Add the remaining ingredients, except chocolate chips, and blend everything into a smooth, slightly thick batter. Fold in chocolate chips at the end.

4- Grease or line a square 9×9 cake pan and fill with brownie batter.
Bake for 20 minutes.

5- Add ingredients for the frosting to the food processor (no need to clean it first) and blend until smooth. Adjust sweetness to your liking by adding extra syrup if necessary and refrigerate.

6- Once the brownies have cooled down, spread frosting over it and enjoy! ❤️
