Chicken Shish Kebabs

This beautiful weather is making me crave summer food! I used chicken breast and made a quick marinade with yoghurt, cumin, paprika, pul biber, lemon, honey and garlic! To give extra flavours I sprinkle some oregano on the kebabs before serving! If you have time I would marinate the chicken for a couple of hours.

Ingredients

800g chicken breast or thighs, cut into chunks
1 tsp paprika
2 tsp cumin
1 tsp coriander
1/2-1 tsp pul biber or chilli flakes
3 garlic cloves
4-5 tbsp Greek yoghurt
1/2 lemon juice
2-3 tsp of honey
2 tbsp olive oil 

Instructions

Mix in a bowl together the yoghurt, paprika, coriander, cumin, pul biber, lemon juice, garlic and honey. Coat the chicken with the mix leave to marinate if possible.

I use metal skewers but If you’re using wooden skewers, soak them in cold water for 20-30 mins to stop them burning.

Preheat the oven to 200C (fan oven). Thread the chicken on kebabs brush olive oil on the kebabs. Roast for 30-40 minutes. Sprinkle the kebabs with oregano and serve.

I served mine with roasted veggies, flat breads and tzatziki.
